Using only Japanese-grown soybeans, rice koji, and natural salt, you'll prepare your own miso following time-honored Japanese methods. The miso you make will then be left to slowly mature for about 10 months inside the historic storehouse, Shimonishi. Surrounded by the clear air and rich nature of Yamato Town, it will gradually ferment and develop a deep, complex flavor.
On the day of the experience, you will also enjoy tasting miso that has been matured in advance. By comparing the differences in taste and aroma depending on the aging period, you can gain a deeper understanding of the miso-making process.
After the aging period is complete, you will be able to receive your finished miso.
