Experience traditional additive-free miso making at Shimonishi, a beautifully preserved 200-year-old storehouse in Yamato Town, Kumamoto.

Using only Japanese-grown soybeans, rice koji, and natural salt, you'll prepare your own miso following time-honored Japanese methods. Your miso will then be carefully aged in the historic storehouse for approximately 10 months, allowing rich flavors to develop naturally in the peaceful surroundings of Yamato Town.

On the day of your visit, you'll also enjoy tasting miso that has already been fully matured. This is a unique opportunity to discover Japan's traditional fermentation techniques and food culture through an authentic, hands-on experience.

The Experience

This special program lets you experience additive-free miso making at Shimonishi, a 200-year-old storehouse located in Yamato Town, Kumamoto.

Using only Japanese-grown soybeans, rice koji, and natural salt, you will prepare your very own miso using traditional methods. The miso you make will then be left to slowly mature for about 10 months inside the historic storehouse, Shimonishi. Surrounded by the clear air and rich nature of Yamato Town, it will gradually ferment and develop a deep, complex flavor.

On the day of the experience, you will also enjoy tasting miso that has been matured in advance. By comparing the differences in taste and aroma depending on the aging period, you can gain a deeper understanding of the miso-making process.

After the aging period is complete, you will be able to receive your finished miso. This makes the program a truly special experience, allowing you to enjoy not only the preparation process but also the time it takes for the miso to mature. Discover the traditional fermentation and food culture of Japan through this unique program found only in Yamato Town.
